Plant-Based Christmas Nog

As Christmas approaches, it can be challenging to find whole-foods, plant-based alternatives for some of our holiday favorites.


While there is vegan "eggnog" out there in stores, they are more concerned with mimicking eggnog's flavor and texture than maintaining their integrity as a plant-forward or health-promoting.


However, It's surprisingly easy to make our own plant-forward options when we have the will.

In fact, making this holiday WFPB nog was actually so easy and consumed very little of my time! Just 15 minutes.




Start with 1/2 cups of cashews and 2 dates. Soak them in hot water for approximately 10 minutes.


Once soft, drain them and add them, spices, soymilk, vanilla, and some maple syrup (optional) to a blender and voila! You've got a delicious holiday treat in less than 15 minutes.


If you want you can heat it up the stove to enjoy warm (just omit the cashews), or enjoy it chilled in your favorite mug.
