Beeeeeen a while since I had a recipe to share. But this one is so great for busy weeknights, parties, or just any old evening :)
They are a great balance of vegetables and protein (it's optional to add in chickpeas or black or pinto beans to boost the nutrition).
What I love is they are minimal prep, and pretty much as soon as they are out of the oven they are ready to eat! So quick, easy, nutrient-dense, and filling!
