Fluffy Banana Pancakes

Growing up, my dad always made pancakes or waffles for us on Sunday mornings. I like to continue that tradition with Ray and now Junia. We like having pancakes or waffles at least once a week. I've been on the quest for some delicious vegan pancakes for what seems like years. While I do love my own green pancake recipe, I have a joy for banana pancakes that are just simple and delicious.


I decided to experiment and see what kind of simple banana pancake recipe I could create. Voila! This recipe was born. I hope you enjoy these fluffy and delicious banana pancakes. If I'm being honest, they are best with a few chocolate chips but are also great on their own with delicious toppings like chia jam, almond butter, or a small drizzle of maple syrup.


I hope this recipe helps you have some delicious weekend breakfasts. Serve them alongside a bowl of delicious fresh fruit or a tofu veggie scramble! Or enjoy them on their own as a breakfast or snack.
